Sunchoke, Helianthus tuberosus
Also called Jerusalem artichoke or sunroot, sunchoke is a traditional North American root vegetable in the sunflower family. The tubers are similar to potatoes in texture, but with a flavor reminiscent of artichoke. Plants get 5-10 ft tall and bear small yellow flowers in late summer.
Sunchokes prefer full sun and well-drained soil. They will thrive in a wide range of soil types. They are aggressive spreaders and will quickly fill a bed. Tubers are cold-hardy and will regrow the following season if left in the ground.
